While my linguines were cooking I warmed-up some of my BBQ dried tomatoes in a large skillet and grated a lot of Leonardo’s Parmigiano. When the pasta were nearly done I added them to the skillet with a bit of their cooking water, some olive oil and the Parmigiano. I cooked them one more minute, stirring constantly and finished them with some extra Parmigiano shaved on top and torn basil.
A delicious and healthy dinner ready in the time it took to boil pasta! (+ one minute)
