Salame Soffrito

This is such a fantastic idea from one of my favourite food blogs, Ideas in Food!

Mince equal parts onion and your favourite salame in the food processor. Cook it slowly down in a pan coated with olive oil for about 30 minutes until the onions are tender and the salami is lightly caramelized. Cool it down and use for enriching sauces a la minute.

I tried with Pello’s Chorizo and the result is magnificent: sweet, savoury, smoky! Definitely a new building bloc in my kitchen. The taste is so rich you won’t need a lot. One or two spoons will go a long way.
